How To Make Doupi

ou-pi (三鲜豆皮) has always been a favourite among the locals of Wuhan and tourists. With the perfect blend of saltiness from the soy sauce and pork, sourness from the Shaoxing rice wine and sweetness from the mung beans and glutinous rice, Doupi is a flavourful snack that can be eaten at any time of the day.

With just a few ingredients and easy steps, you can easily recreate Doupi in the comfort of your home!

Place of Recommendation:
San Xian Doupi located at the entrance of Hubuxiang, Ziyou Road, Wuhan 430060, Hubei Province.
Ingredients you will need for 4 servings
You can find all of these ingredients in your neighbourhood NTUC Fairprice, Sheng Shiong or Cold Storage.
To prepare:
Before you get to putting Doupi together, you would need to prepare the glutinous rice, batter and fillings first.
To prepare the glutinous rice:
Step 1: Wash and soak it in water for eight hours.
Step 2: Drain, then steam it over a strong flame.
Step 3: Stir fry 50g of lard, 250g of water and a pinch of salt.
Step 4: Leave to cool as you prepare the other ingredients.
To prepare the Doupi batter:
Step 1: Grind the mung beans in a coffee grinder or high power blender, then soak in water for four hours.
Step 2: Wash the rice then soak it in room temperature water for six hours.
Step 3: With the ratio of mung beans to rice being 1:2, stir in the mung beans until the batter is fine.
To prepare the fillings:
Step 1: Place the diced pork into the pan.
Step 2: Add in soy sauce, sake, MSG, salt, and 250g of water. Stir-fry until cooked and the sauce thickens.
To make Doupi:
Now, on to the best part, preparing the dish!
Step 1: Heat the pan and brush it with oil. Pour in the batter thinly.
Step 2: When the batter solidifies, crack in the two eggs. After the omelette forms, flip it, making sure that the omelette is nicely spread out at the bottom.
Tip: Reduce the fire to prevent charring
Step 3: Pour in the glutinous rice. Then, spread it out evenly, making sure that it is around one cm thick and square-shaped. Add a pinch of salt.
Step 4: When the rice softens, pour in the filling. Drizzle in a tablespoon of soy sauce for a tinge of saltiness.
Step 5: Fold in the edges of the omelette to make it squared. Flatten it afterwards.
Step 6: When the omelette turns golden brown, flip it in order to cook the other side.
Step 7: Chop the Doupi up to squares of 5 by 5 cm and serve with a dash of chopped spring onions!
